ENCHILADAS

1 lb. (453g) Stew Beef 8 oz (227g) Mushrooms 6 Flour Tortillas  or Corn Tortillas  Corn Tortilla 4 oz (113g) Shredded Cheese (Mexican Style Mix)     Monterey Jack     Cheddar     Asadero     Queso Quesadilla 6 oz (170g) Mozzarella Cheese 1/4 Cup Enchiladas Sauce Enchiladas Sauce 1 Onion 2 Tbsp Vegetable Oil Salt, Black Pepper PREPARATIONS: 1- Dice the Onion. 2- Slice the mushrooms. DIRECTIONS: 1- Place the beef in a pot. Add a pinch of salt and black pepper. 2- Pour in enough water to cover the beef. 3- Cover the pot with a lid and cook for about 2 hours over medium heat or until the beef is fully cooked. 4- Remove the cooked beef from the pot using a strainer. 5- Shred the beef as shown in the video. 6- Fry the diced onion in vegetable oil until translucent. 7- Add the sliced mushrooms and continue the for few more minutes or until the mushrooms turn translucent. 8- Take a small square shape cookware (about the length of the tortillas). 9- Cover surface of the cookware with a thin layer of enchiladas sauce and spread across evenly. 10- Take a tortilla, add a layer of shredded cook beef, cooked mushrooms (mixture) and Mexican style shredded cheese, and wrap the tortilla around. 11- Place the wrap in the bakeware seam side down. Place enough wrap to cover the whole bakeware. (if more ingredients left, use another bakeware). 12- Cover the wraps with another layer of enchiladas sauce. 13- Top the sauce with mozzarella cheese and a small portion of Mexican style shredded cheese. 14- Preheat oven to 400º F (204º C), Bake the enchiladas for 15 minutes.
