"Grape Sucuk" 3.5 lb (1.58 kg) Seedless Grapes 12 oz (430 g) Walnuts 1 Cup All-Purpose Flour 1 Cup Sugar 1 Tsp Ginger Powder 1/4 Tsp Saffron PREPARATIONS: 1- Wash and de-stem the grapes. 2- Unshell the walnuts and break them into smaller pieces. 3- Soak the saffron in two tbsp boiling water for about an hour. - 3 1/3 Cups All Purpose Flour (1 lb)
- 1/2 Tsp Yeast
- 1 Tsp Salt
- Wheat Bran, Sesame Seeds, Nigella Seeds
1- Heat 1 1/4 Cup of water to 105º to 115º F (40º to 46º C).
2- Add yeast to the water and stir thoroughly.
3- Combine all purpose flour with salt in a large bowl.
4- Add the water/yeast mixture to the flour bowl gradually and stir well.
5- Knead the dough on a working surface for 5 to 10 minutes.
6- Place the dough back in the bowl, cover with a lid or plastic wrap.
7- Let dough rise for about an hour or double in size.
8- Combine 1 tbsp all purpose flour with 3 tbsp water in a pot.
9- Heat the mixture until just boils and simmer until thickened.
10- Take half of the dough and roll out in an inch thick oval shape.
11- Sprinkle wheat bran across a bakeware.
12- Transfer the dough onto the bakeware.
13- Brush the surface of the dough with the heated flour/water mixture.
14- Sprinkle sesame and nigella seeds over the dough.
15- Preheat the oven to 335º F (168º C), bake the barbari bread for 30 to 35 minute until golden.
