3 Tomatoes 3 Cucumbers 1 Small Onion 1/4 Bunch Mint (leaves) 2 Lemons 1/3 Cup Verjuice (Sour Grape Juice) 2 Tbsp Olive Oil Salt PREPARATIONS: 1- Dice the tomatoes, cucumbers and the onion. 2- Mince the fresh mint. DIRECTIONS: 1- Combine diced tomatoes, cucumbers, onions and minced mint in a large bowl. 2- Squeeze two fresh lemon into the bowl. 3- Add salt as much as preferred. 4- Add verjuice to the salad. 5- Add olive oil. 6- Stir thoroughly until well mixed. 7- Keep the salad in refrigerator for at least half an hour before serving.

Salad Shirazi (Shirazi: From Shiraz: a city of Iran, the capital of Fars Province). Salad Shirazi is full of antioxidants and vitamins, just like most salads. Salad shirazi, as the name suggests, is a popular Persian salad. The combination of ingredients is well balanced. Salad Shirazi is a great source of vitamin B6 and vitamin C. It contains high amounts of iron and very high amounts of potassium. 3.5 ounces (100 grams) of salad shirazi has 36 calories. It has no cholesterol and it's very low in fat. Although salad Shirazi is quite filling, it is not suggested to be consumed with empty stomach, the lemon juice and sour grape juice may cause heart burn. Traditionally, Salad Shirazi is served as side with kabobs.

  BARBARI BREAD

  • 3 1/3 Cups All Purpose Flour (1 lb)
  • 1/2 Tsp Yeast
  • 1 Tsp Salt
  • Wheat Bran, Sesame Seeds, Nigella Seeds
PREPARATIONS:

None.

DIRECTIONS:

1- Heat 1 1/4 Cup of water to 105º to 115º F (40º to 46º C).
2- Add yeast to the water and stir thoroughly.
3- Combine all purpose flour with salt in a large bowl.
4- Add the water/yeast mixture to the flour bowl gradually and stir well.
5- Knead the dough on a working surface for 5 to 10 minutes.
6- Place the dough back in the bowl, cover with a lid or plastic wrap.
7- Let dough rise for about an hour or double in size.
8- Combine 1 tbsp all purpose flour with 3 tbsp water in a pot.
9- Heat the mixture until just boils and simmer until thickened.
10- Take half of the dough and roll out in an inch thick oval shape.
11- Sprinkle wheat bran across a bakeware.
12- Transfer the dough onto the bakeware.
13- Brush the surface of the dough with the heated flour/water mixture.
14- Sprinkle sesame and nigella seeds over the dough.
15- Preheat the oven to 335º F (168º C), bake the barbari bread for 30 to 35 minute until golden.
